Jalapeno Tuna Quinoa Bowl
This colorful flavor combination is packed with protein and perfect for a quick and easy dinner.
1 pouch (3 oz.) Blue Harbor Fish Co. ® Albacore Tuna with Jalapenos
1 cup cooked quinoa
2 Tbsp. small diced red pepper
2 Tbsp. small diced green pepper
¼ cup black beans
¼ cup corn
1 Tbsp. red onion
½ cup diced mango
½ avocado, diced
Garnish with plantain chips if desired
¼ cup plain Greek yogurt
- In a small bowl, mix quinoa, peppers, beans, corn, onion and mango. Gently toss in tuna to combine well.
- Top with avocado and serve with plantain chips and yogurt on the side.
